Cabbage

Cabbage often gets dismissed as a bland vegetable, but this leafy bloom is loaded with vitamin C, fiber and amino acids. The veggie can come in green or red varieties and is most often boiled or added to soups or stews. And there are many varied recipes for coleslaw using shredded raw cabbage, carrots, onions and other healthy veggies.
