These small pea-shaped members of the legume family are simple to cook and are packed with protein, iron, B vitamins, folate and cholesterol-lowering soluble fiber. Try making a lentil soup with 2 cups of water per each cup of lentils. Bring to a boil and reduce to a simmer. Add some of your favorite spices like curry or ginger and toss in tomatoes, spinach, onion or potatoes—your choice. A creative, delicious soup should be ready in about an hour.
