Get These Powerful Disease-Fighting Greens

Surprisingly, the variation of greens you choose for your salad or recipe can mean a world of difference when it comes to added nutritional value. According to the authors of Eat This! Not That! The Supermarket Survival Guide, iceberg lettuce is pretty much void of fiber, vitamins or minerals. Instead, why not try these healthier greens:

  • Romaine—this lettuce is described as celery-flavored and is loaded with beta-carotene for added protection against eye-related diseases and even abnormal prostate cell growth.
  • Arugula—this mustard-flavored green contains magnesium and provides 10 percent of the calcium found in whole milk, but with zero saturated fat.  
  • Watercress—this pepper-flavored green is loaded with phytochemicals that act as natural filters to block the absorption of airborne pollutants.
  • Endive—described as crisp and bitter, this green provides fiber and folate.
  • Mustard greens—these greens are spicy and crunchy and contain the memory-boosting amino acid tyrosine.
  • Bok choy—this Asian cabbage favorite has a light sweet flavor and contains vitamins A and C, plus phytochemicals such as flavonoids, isothiocyanates and dithiolthione.
  • Spinach—this dark leafy green contains eye-protecting antioxidants lutein and zeaxanthin.
  • Kohlrabi—described as a combination of cabbage and turnips, this green provides 25 percent of your daily requirement of potassium and the phytochemical glucosinolate.
